Well, it’s back to school time, summer is winding down and the days are already growing shorter. You know what that means…it’s time for wonderful, fresh, northwest apples and pears. Here’s a classic favorite with a bit of a twist and it’s a lot quicker and easier than rolling out dough.
Try a mix of sweet and tart apples of different colors and even throw in some Asian Pears for a more complex flavor.

French Apple Cobbler

Ingredients
- 3 lbs. apples, peeled, cored and sliced
- FILLING
- 3/4 c sugar
- 2 T flour
- 1 t cinnamon
- 1/4 t salt
- 1 t vanilla
- 1/4 c water
- 1 T butter
- TOPPING
- 1/2 c flour
- 1/2 c sugar
- 1/2 t baking powder
- 1/4 salt
- 2 T butter
- 1 egg, beaten
Instructions
- preheat oven to 350 degrees
- grease 9 inch pie plate with butter
- in a medium bowl combine the filling ingredients and mix with a fork
- pour the mixture into the pie plate
- in a small bowl mix topping ingredients
- spoon dollops of dough around the apples
- bake for 35-40 minutes until topping is golden brown
- top with creme fraiche, whipped cream or vanilla ice cream
