Today just seems like a cool day, so here’s a quick little stew recipe to warm up with. Personally I find it easier to use the Willapa Bay Oysters that are jarred, but you can substitute for the in shell oysters. All you need to do is shuck them and reserve some of the juice found inside with the oyster (aka the oyster liquor) and add to the stew with the oysters.

Quick to prep & Quick to delight, here’s an easy Oyster soup, perfect for cool wintry days!
Ingredients
- 1-2 Jars Fresh Oysters
- 1/4 Cup Unsalted Butter
- 1 Small Yellow Onion, Minced
- 1 Celery Stalk, Chopped
- Pinch of Celery Seed
- 2 Cups Heavy (Double) Cream
- 2 Cups Milk
- 1/4 Teaspoon Paprika
- Salt & Pepper (as much or as little as you like.)
Instructions
- In soup pot, melt butter over medium heat.
- Add onion, celery stalk & celery seed.
- Stir well, cover and cook, stirring occasionally until veggies are soft. (About 12 minutes)
- Add heavy cream, and milk.
- Add Paprika, salt & pepper to your liking.
- Heat just until bubbles form around the edge of the pot.
- Add oysters & bit of oyster juice (aka oyster liquor) and simmer until they are cooked. (About 1-2 minutes, should be firm to touch.) Do not allow to boil.
- Dish into soup bowls & enjoy!
