Recipe: French Apple Cobbler

Well, it’s back to school time, summer is winding down and the days are already growing shorter. You know what that means…it’s time for wonderful, fresh, northwest apples and pears. Here’s a classic favorite with a bit of a twist and it’s a lot quicker and easier than rolling out dough.

Try a mix of sweet and tart apples of different colors and even throw in some Asian Pears for a more complex flavor.

And if you really are not in the mood to make cobbler yourself, you can buy freshly-made pies and cobbler from our Store Deli!

French Apple Cobbler

Serves: 8
Ingredients
  • 3 lbs. apples, peeled, cored and sliced
  • FILLING
  • 3/4 c sugar
  • 2 T flour
  • 1 t cinnamon
  • 1/4 t salt
  • 1 t vanilla
  • 1/4 c water
  • 1 T butter
  • TOPPING
  • 1/2 c flour
  • 1/2 c sugar
  • 1/2 t baking powder
  • 1/4 salt
  • 2 T butter
  • 1 egg, beaten
Instructions
  1. preheat oven to 350 degrees
  2. grease 9 inch pie plate with butter
  3. in a medium bowl combine the filling ingredients and mix with a fork
  4. pour the mixture into the pie plate
  5. in a small bowl mix topping ingredients
  6. spoon dollops of dough around the apples
  7. bake for 35-40 minutes until topping is golden brown
  8. top with creme fraiche, whipped cream or vanilla ice cream
