Sake-Steamed Chicken
Serves 4 to 6
1 whole Smart Chicken
Kosher Salt
1½ cups sake (Manzanita Market carries a full selection of sake to choose from)
1½ cups water
5 scallions, cut into 2-inch pieces
Sauce
2 tablespoons soy sauce
2 tablespoons orange juice
2 teaspoons rice vinegar
1 teaspoon lemon juice
1 teaspoon sherry (or sake)
1 tablespoon chopped fresh ginger
1 garlic clove, minced
Pour sake, water, and scallions into the bottom of a large stockpot with steamer basket. Bring to a boil.
Meanwhile, generously salt the chicken inside and out; set breast side up in the steamer basket. Reduce the heat to a low simmer and cover. Steam the chicken for 1 to 1½ hours, until cooked through. Remove from heat and let cool for about 20 minutes.
Whisk together the sauce ingredients.
Carve the chicken and serve over rice with sauce spooned over the top. Garnish with orange zest, scallions, and black sesame seeds.
