Craving sushi but short on time? No worries. These easy sushi bowls have all the tastes of sushi rolls with none of the hassle. Experiment with your favorite ingredients like cooked salmon, edamame, egg, blanched asparagus spears and radish sprouts and make this dish your own original creation!

This dish makes an easy, healthy dinner for weeknights when you are on-the-go. Use sushi rice or healthy brown rice instead for added fiber and vitamins.
Ingredients
- 2 cups cooked sushi or short grain brown rice (cooled)
- 1/2 cup cooked shelled crab
- 1 avocado, cut into slices
- 1 medium carrot, shredded
- 5 radishes or ½ giant daikon radish sliced or shredded
- 5 green onions diced
- 1-2 tablespoons toasted sesame seeds
- 1 sheet toasted nori seaweed slivered (use scissors to cut into long shreds)
- <strong>Wasabi Dressing</strong>
- 2 teaspoon wasabi paste (if you don’t want it zingy use less wasabi)
- 4 teaspoons soy sauce
- 2 teaspoon grated fresh ginger
- 1/4 cup rice wine vinegar
- 1 teaspoon sesame oil
Instructions
- Place ½ – 1 cup of rice in a bowl and artfully top with avocado, crab meat and veggies. Place all dressing ingredients in a small jar or bowl and mix well until everything is blended together. Set aside. Right before serving top with 1-2 tablespoons of the wasabi dressing (below) and garnish with toasted sesame seeds and nori. Serve with additional dressing (if desired.)
