Garlic-Herb Crusted Beef Roast
Recipe Type: Beef Dinner
Prep time: 10 mins
Cook time: 1 hour 45 mins
Total time: 1 hour 55 mins
Serves: 6-8 6oz servings
Here’s a simple and quick recipe for Bottom Round Roasts, originally found @ http://tinyurl.com/m5amur2
Ingredients
  • 3-4Lb Bottom Round Roast (You can also use Top Round Roast!)
  • Salt
  • Ground Black Pepper
  • Rub:
  • 2 teaspoon Garlic-Pepper Seasoning
  • 2 teaspoon Dried Basil, crushed
  • 2 teaspoons Dried Thyme, crushed
  • 1 teaspoon Dried Parsley, crushed
Instructions
  1. Preheat oven to 325F. Combine rub into a small bowl and rub evenly on all sides of the Roast.
  2. Place roast on a rack in a shallow roasting pan. Don’t add water or cover.
  3. Insert ovenproof meat thermometer so tip is centered in thickest part of beef.
  4. Roast in oven for 1 1/4 to 1 3/4ths of an hour for medium rare.
  5. Remove roast and check thermometer. 135F for medium rare.
  6. Transfer roast to cutting board, tent roast with foil, let stand for 15-20 minutes.
  7. Cut into thin slices, and season with salt and pepper as desired. Serve and enjoy!
