Garlic-Herb Crusted Beef Roast

Ingredients
- 3-4Lb Bottom Round Roast (You can also use Top Round Roast!)
- Salt
- Ground Black Pepper
- Rub:
- 2 teaspoon Garlic-Pepper Seasoning
- 2 teaspoon Dried Basil, crushed
- 2 teaspoons Dried Thyme, crushed
- 1 teaspoon Dried Parsley, crushed
Instructions
- Preheat oven to 325F. Combine rub into a small bowl and rub evenly on all sides of the Roast.
- Place roast on a rack in a shallow roasting pan. Don’t add water or cover.
- Insert ovenproof meat thermometer so tip is centered in thickest part of beef.
- Roast in oven for 1 1/4 to 1 3/4ths of an hour for medium rare.
- Remove roast and check thermometer. 135F for medium rare.
- Transfer roast to cutting board, tent roast with foil, let stand for 15-20 minutes.
- Cut into thin slices, and season with salt and pepper as desired. Serve and enjoy!
